Ehmm.. This is the simplest (almost the simplest, I guess) chinese dish. You can make this easily in 10 minute. And this is also the most traditional chinese food. It's the most common dish on a chinese dinner table.
It's name is ———— Tomato egg!!
Ya... Well, it's tomato again... :-) Ehmm. I was thinking maybe I shouldn't make tomato this week again as last week I introduced a tomato soup. But very soon I was sure I will make this. I think we should start with the easy one. And anyway, I PROMISE that I will not cook tomato next week XD. \
Materials that you need: 6 tomatoes. 5 or 6 or 7 eggs (It depends on how you like the eggs). and KETCHUP!!!! ( Not really necessary but it will make the dish tastes so much better)
Step 1: Of course, wash the tomatoes~ :-)
Step 2: Cut the tomatoes into boat shape. (ya... again, boat shape)
Step 3: put some sugar on the tomatoes. Just a little. You don't need to cover every single tomatoes with sugar.
Step 4: Put all the eggs into a small bowl or container. Add some salts (can't say how much but until you can tastes the salt from the eggs)
Step 4: Mix all the eggs together! Don't stop before the eggs mix is getting a golden colour.
Step 5: Put down a pan. Set the fire to maximum and pour some oil. (not too much oil, just shake the pan and make sure that there is a very think layer of oil covering the pan.)
Step 6: put your hands above the pan and when you can feel the heat. Pour down the eggs.
Step 7: Remember! We don't need a pancake!! Use your spatula to cut the eggs into small pieces!
Step 8: Cook the eggs until they are half fried. Which means you can see some dark golden (or brown....) colour on the eggs. Pour all the eggs into a container. (Don't stop the fire!!)
Step 9: Pull some oil (the same amount as the egg's one) on the pan and wait until you can feel the heat when you put your hands above the pan
Step 10: Put the tomatoes in. Set the fire to maximum and cook 4 to 5 minutes.
Step 11: Put the eggs in. Add some ketchup if you like. (until the eggs are red)
Step 12: Cook for another 5 minutes.
Step 13: Enjoy your dish :-)

Tianci, what is the other dish in the final picture? Is that the aubergine dish you just posted, or something else?
These look yummy! The tomato egg dish looks like it's quick and simple. I'll be giving this a try!
